About this coffee Jorge Elias Rojas is a graduate of Forest Coffee’s Black Condor program, a community lot coffee we see on the menu here each year. He has been working with Forest for the last 4 years and has had his coffees exported to Europe, North America and UAE. His farm, Finca El Jardin, is located in the most southern part of Tolima, in Planadas, the Parque Nacional Natural Nevado del Huila neighboring the region to the south.

Jorge’s journey in farming coffee begun at 13, and in more recent years proceeded to start his own brand, La Roca, and continued influencing his families participation in specialty coffee with his brother, Ángel Rojas, placing 3rd in this years Cup of Excellence.

Tucked away along the steep slopes of Cordillera Central, the central mountain range of the Andes, the farm sits amongst the clouds for much of the year. Slow maturation and ripe red cherries are hand harvested by the family at 18-20 brix and set up for a 24hr, 18 degrees celsius, anaerobic fermentation. The coffee is then pulped and fermented in open air for 36hrs before being thoroughly washed clean and dried in shade for 25 days.

This Yellow Bourbon has bright stone fruits, tropicals, berries and backed by floral aromas. A coffee that truly has it all.

Our current roasting schedule is Monday through Wednesday and best enjoyed 14 days after roast date. Orders ship on Wednesdays.
